Milk vs Curd
Lactobacillus acidophilus
growth in milk causes liquid milk to coagulate and curdle. Yogurt is made by
boiling milk well adding a little curd rich in lactobacillus and leaving it
to stand for a certain time. Lactobacillus causes chemical changes in the milk
sugar lactose. Yogurt is slightly sour due to the presence of lactic acid
produced by this chemical reaction in yogurt. The nutritional value of milk and
milk is roughly the same. Milk protein, fat, and calories are almost the same as
yogurt. So those who cannot digest milk properly can eat curd. Yogurt is a
good alternative to milk for vegetarians as it has almost the same nutritional
value as milk. It also contains twice as much vitamin A as milk.
